We send the fresh truffles in a special sealed package which comes from the food industry, so it can be kept in the fridge for 3 months.

It is air tight and stops the growth of other fungi. So if the mushroom would go on a long journey of a few days (or even weeks), it would arive to the customer in good condition.

This is how we keep the truffles fresh for 3 months: shelf-life of fresh product can be extended by exposing the product to low oxygen and elevated carbondioxide levels. These gas levels deflect from normal air and are called modified atmosphere conditions. Applying modified atmospheric conditions is a well established technique to pack vegetables and fruit, including mushrooms. Gas levels are created by natural means. Respiratory activity of the packed living products, using oxygen and producing carbondioxide, drives the changes in gas levels. The packaging limits gas exchange to a point where a stable condition is established. Tuning the packaging properties to that of the respiring product was done on the basis of extensive research.

 

Store the truffles at 4 degrees Celsius (in the fridge). The truffles can stay in the fresh package for 12 weeks if unopened. After opening the truffles they can usually stay fresh for 3 more weeks.

We ship our truffles in special sealed 12 grams packages, with a shelf-life of  at least 12 weeks.

If you dry them you can store them even longer.
